Ingredients
  

  • 1 lbs Italian sausage Sweet or spicy
  • 1/2 lbs Bacon Cooked, crumbled (Optional topping)
  • 2 tbsp Salted butter
  • 1 Onion Chopped
  • 6-8 Garlic cloves Minced
  • 3-4 Russet potatoes Large, cubed
  • 5-6 cups Chicken stock
  • 1 1/2 cup Heavy cream
  • 1 cup Kale Chopped
  • 1 cup Parmesan Shredded
  • Salt & pepper to taste

Method
 

  1. Cook crumbled sausage in a Dutch oven over medium heat
  2. Remove the sausage from the Dutch oven
  3. Melt butter in the Dutch oven, and then add onions cooking until translucent
  4. Add garlic, cook for another minute
  5. Add the sausage back in along with potatoes and add chicken stock
  6. Bring to a boil covered until potatoes are soft but not fully cooked yet
  7. Stir in cream, kale, parmesan, and salt, and pepper
  8. Cook for 5-10 minutes on simmer.
  9. Top with parmesan and bacon
  10. Serve with your favorite bread or rolls
